Week One – Done!

Well, week one of the challenge is over with and complete. I did pretty well, I think! I thought I would give you guys a rundown of what I ate during week one and maybe for the weeks to come (this week included!) Basically, I eat the same meal for 5 days in a row. Not joking. I meal plan on Saturdays, get groceries and then cook on Sundays. It is really the only way that I will survive the week without eating poorly. It’s sad but it’s something I have come to terms with.

Week 1 Breakfast:

– Egg Muffin (eggs, green pepper, turkey sausage)

– 1 large banana

Week 1 Lunch

– Salad (lettuce, tomato, green pepper, cucumber, slices of chicken, hard boiled egg, mustard for dressing)

* yes, I just put a half a tablespoon of mustard on top of the salad and sort of give it a good shake in it’s Ziploc container. It works.

– Organic Applesauce (just apples and water)

Week 1 Dinner

– 1 Cup of Broccoli

– 1 Porkchop

The weekends were the hardest and I found myself munching on sunflower seeds a lot. I also ordered a Lettuce Wrap from Jimmie Johns but I forgot to remove the mayo so… negative points for me 🙁 I really, really wanted sweets over the weekend but I held off! I did have a few larbars though… the Apple Pie ones are so good.

Over-all, I ended up having a successful week one! I lost 3.2lbs and lost 2.5 inches on my hips, .5 inches on my chest, .75 inches on my waist, and .625 inches on my thighs. I am hoping for just of a successful week 2! Wish me luck!

Tomorrow, It Begins

After a month of waiting for the LuRong Living Weight Loss for Warrior challenge to begin, it is finally here! I admit that this whole week, all I could think about is what I will not be able to eat for six weeks. Six weeks! It seems pretty daunting when you think about it, really. Six weeks is a really long time! 42 days to be exact. With this thought on my mind all week, I had been pinning random desserts all over my pinterest board. I have also been pinning paleo recipes/whole30 recipes but those aren’t as fun to look at.

However, I went grocery shopping already for it and am quite pleased with myself. I took a photo of my grocery haul, minus the organic applesauce and pork chops but you get the drift. I apologize for the quality of the pic, but I didn’t feel like pulling out  my DSLR just for a grocery haul.


I am not sure what I will make myself outside of salads but I think I am going to chop up one of those green peppers, or half of a green pepper, and add it to my egg muffins that I am going to be making here shortly for breakfast. Have I ever mentioned that I am not a breakfast person? If not, I am now. I am not a morning person and am never hungry when I wake up! Even when I don’t eat after 7pm, I am not hungry until about 11am the next day. There are times that I will eat a banana or orange before work but clearly I need more food in the morning during this challenge so yep, egg muffins it is! I will not be adding an almond flour crust to them like I did in the recipe posted somewhere in this blog.

I am not very creative when it comes to meal prepping and if I am being honest here, I can easily eat the same meal for a whole week and not get bored. Is that sad? Probably, but I prefer just having something I can pop into the microwave during the week and eat it. I don’t need anything fancy! I believe the reason I feel that way is because when I grew up, we didn’t eat anything fancy. My mom’s cooking usually consisted of a meat, a vegetable and either rice or potatoes. Sometimes, she would make dumplings and that was amazing. I am from Bohemian decent so bread dumplings are by far my all time favorite food! I wish they weren’t so no-no because god, I love them! It’s like the one thing I enjoy when I visit my parents haha.




They just released the workout and I am good with everything BUT the running backwards for 31 yards. I am not very graceful/coordinated so running backwards may be dangerous for me. If I come back this week with a post saying that I am injured, you will know why.

What Is This?!


Waking up to a “wintery wonderland” is not a good start for a Monday. It’s rather bizarre because on Friday it was 70°F outside and now today, it was only 39°F with snow. It all eventually melted, for the most part, but still… it didn’t make me happy! I just want it to be 60°F or warmer going forward. It’s time for spring!

The Weight Loss for Warriors challenge is growing closer and I am stocking up on frozen vegetables. My whole freezer is full at this point so now I just need to start stocking up on meat! I think the hardest will be lunch because I usually eat soup and that won’t be an option unless I make my own with vegetables and chicken. I probably could do that, it will really all be a matter of how lazy I am. It wouldn’t be shocking to me at all if I survive strictly on chicken, frozen vegetables, shrimp, eggs, and pork. I’m sort of picky about what I like to eat! I know, I know… I need to stop being lazy and make some darn recipes! I will try to do that either this week or next. I promise.

That’s all I really had to say at this point. I have been contemplating doing vlogs for the WLFW but I haven’t decided if I want to yet or not. Stay tuned!

Lurong Living: Weightloss for Warriors

Happy April, everybody! Spring is here and summer is creeping closer and closer, so I hope everybody is having great success with their weight loss goals. I know that sometimes when April arrives, I get this feeling of panic from the thought of having to wear more revealing clothes but not yet in the best of shape. However, this year I am going to be doing something new that I have never done before.

This challenge takes place from April 28th – June 8th and consists of 6 weeks of pretty strict eating. I have been striving to be 80% paleo but this challenge will require me to be 100%! It will be tough but I think I am finally up for it. I have 100% cut soda out of my diet, which was my one weakness, and have been strictly drinking water for 2 weeks now. Every now and then I drink tea but, still, tea is still okay. I think the hardest part will be the NO sugar. If you read my previous post, you would read that I have mad sugar cravings. I should check out the ingredients for my gluten free brownies and see if they are all safe for this challenge… that might save me! Actually, I could probably make some chocolate “pudding” with unsweetened cocoa powder (allowed), avocado (allowed), and a tablespoon of honey (allowed). Hmmm… guess I will have to get creative here! I like challenges. They keep me motivated.

Well, now it’s time for me to finish up season 3 of Game of Thrones! It’s almost Season 4 time! Pretty excited!


I Need Chocolate

For the past few days, I have been battling on and off with a migraine that likes to come in waves. It will be there in the morning, fade out to a headache by lunch and then come back as the afternoon progresses. Today hasn’t been as bad as the other days, as it is just an annoying headache right now but I am so ready for the pain to stop! I don’t know if it is the fluctuating weather or what, but March/April always sucks hardcore for my headaches.

Anyway, I am also broke as a joke this week. It sucks. It’s my own fault for not working very much but meh. In other words, I didn’t have enough money to get groceries this week. No pity parties needed! I have enough food that I am able to eat, it’s just food that I am not craving haha. Such first world problems, right? Well, the one bad part is that my sweet tooth has been throwing a fit and it has made me crabby. Therefore, I had to find a solution… and I did. I had enough ingredients to make myself a brownie pie! A what? A brownie pie. Basically, brownies but I didn’t have enough ingredients for a full pan so I put it into a pie pan. Yep, I am a problem solver. Anyway, these brownies are amazing and are absolutely, 100% gluten free! They are just shy of being paleo because they require agave nectar. Boo. I am sure you could use honey instead, but I haven’t tried it. Maybe when I am not broke!

They require very little ingredients and take about an hour to make. They taste absolutely delicious too! The first time I made these, I was very iffy on how they would taste because they don’t use any flour. That is right. Flour free! How? Easy. You take almond butter, eggs, cocoa powder, agave nectar, salt, vanilla extract and mix, mix, mix! Then you throw it into a brownie pan (or pie pan) and bake for 35 minutes at 350°. Or, if you have an oven like mine, 55 minutes. My oven is terrible. If you want the real recipe, you can go here.




It is Finally Spring!

We made it! Winter has finally left us! Time to breakout the spring clothes, right? I wish. Today was a lovely 55°F but unfortunately, tomorrow is going to be in the 20’s again. I swear that this bouncing of cold and somewhat nice temperatures is making my brain hate me. I have been having headaches on and off all week. It’s quite ridiculous.

Anyway, I have been chugging away on this 300 swing challenge and they are still not any easier! I’ve started throwing in some other moves after the swings because I don’t feel that the swings are doing all that much for muscle tone. I have also been practicing with my hoop for 30 minutes to an hour a day though I can only do so much from my apartment. I wish it was summer! Though, would I really go outside and hoop? Maybe? I haven’t decided on that answer yet.

Speaking of which, I have been watching a lot of hooping videos on YouTube lately. Trying to teach myself new tricks, I guess? However, there are so many girls who post videos that are all, “yay this is me at 4 months!” and they are hooping as if they had been for years. What?! How many hours a day do you all practice?! Seriously, tell me. I thought I was doing well with 30 min to an hour a day! Guess not because I clearly cannot do some of the moves that you all can at 4 months. Grr. I’m a competitive person so I feel that I should be just as good or better since I have been doing this for… uh… 9 months now. Blah.

Food wise, I have been eating lots of tomatoes this week. I’m not sure why, to be honest. I think it’s because I am trying to cut back on sweet things (to cure my sweet tooth) and tomatoes are sort of sweet, so they kill that craving? haha. Another question that I don’t have the answer to! However, I have stopped drinking caffeine! All I have been drinking is water and, okay maybe not all caffeine, green tea. It’s sort of a miracle really because I am not a morning person. No matter how early I go to bed, I absolutely cannot get up in the mornings. I am the worst at waking up. I grumble to myself a lot and stumble around as though I am really drunk for a good 10 minutes. Everybody would laugh at me if they could see how I react getting up at 6:30am! My grandmother used to tell me that when I was older I would love getting up early. Wrong. I am now 30 years old (almost 31, eeek) and I still do not love getting up early. What is the secret to it? I hope it’s not going to bed at 7pm because that will never happen.


At least I got half

A week into the 300 swing challenge! I will say that 300 swings is a lot harder than it originally sounded when I decided to do this challenge. After about 75, my heart usually feels as though it is going to jump right out of my chest and I have to stop to drink water. The second set of 100 is the hardest, no doubt! At least with the third set you know you are almost done.

I also have a sore right knee. Not sure if it’s sore because of the billions of squatting that I have been doing or not. It’s not a painful sore either, just a… muscles a bit tight feeling. I hope that makes sense! Anyway, I might have to drop from 15lb kettle bell to a 10lb kettle bell to see if that helps ease the uncomfortable feeling that it currently has.

The weekend is also almost here which means a whole new week of meal planning. I have shrimp and fish in my freezer so maybe a week of seafood? How does that sound? I dunno! My problem is that seafood isn’t very filling, at least not to me, and it just leaves me craving more! My biggest downfall right now though is sugar. I keep eating fruit to cure the cravings and while fruit isn’t bad for you… I like to eat a lot of it right before I go to bed. Probably not the best time to eat it but oh well! Still better than junk food, right? Right.

300 Swing Challenge

First off, Happy March! Summer is only four months away now which seems like forever when you live in a state that is  still getting pummeled by snow and freezing temperatures. I just want to wake up one morning, not see snow and not have to freeze my tush off to go warm up my car. It would be lovely, if that could happen!

Now for the real topic of interest: 300 Swing Challenge. I was surfing my favorite health blogs when I stumbled upon this 300 swing challenge that is being sponsored by Breaking Muscle. If you are interested for the link, it is here. It started march 1st but it’s never to late to start doing it (even if you cannot sign up). It really doesn’t take all that much time to do 300 swings but I cannot do them in one set. I was doing them in clumps. I see that people have been doing reps of 12 x 25 which I guess would work but, I prefer 100 x 3 🙂 If you do the math, without having a heart rate monitor, and just going by the 300 swings = 947 calories burned, that is 315 calories per 100 swings. That, alone, is pretty darn impressive! However, I hate calorie counting and think that it’s a total waste of time. Why? Because I would rather focus on how many carbs/protein/fat grams I am consuming rather than how many calories are in a certain piece of food. I mean, if you eat 100 calories of cookies vs 100 calories of fruit, which do you think will be better for you? Exactly.

I also discovered that baking pork chops with a bit of beef broth = amazing. Seriously, try it. It is delicious!

French… Scrambled Eggs?

The other day I was craving french toast, but when you don’t eat bread… french toast is pretty impossible to make! However, I was craving it hardcore and needed to have some french toast without being sick to my stomach so I decided to try something. I wasn’t sure it would work because I never heard of anybody making this before (and I apologize if this is old news) so I decided to give it a go.

What if, you made the french toast mix… and turned it into scrambled eggs?! Crazy, I know! So, I did it and I could hear angels singing when I took that first bite. It was exactly like french toast, minus the bread part! Seriously, it tastes amazing and I think I am in heaven now because not only does it taste amazing but it’s quick and easy… and Paleo! It’s seriously heaven in the form of scrambled eggs.

  1. 2 Eggs
  2. 2 Tbsp Almond Milk
  3. 1 Tsp Ground Cinnamon
  1. Put all of your ingredients into a bowl and wisk the ingredients until it's well blended together. Pour the egg mixture into a skillet over medium heat. Keep your spatula moving in a figure eight motion until you get fluffy scrambled eggs! Put onto a plate, drizzle with maple syrup or your favorite french toast topping! Eat.

Paleo Breaded Chicken – Attempt #1

Sometimes, when it is really cold outside and I am just really wanting something good to eat, I crave breaded chicken. I don’t know why but I love breaded chicken! Usually, I prefer when it’s crispy but apparently my oven sucks so it never comes out as crispy as I would have hoped, but it does it’s job.

Normally, when I am craving this, I think of restaurants and the chicken that is usually deep fried in some shape or form. This recipe is not that case. Since I am still tweaking it, I’m not going to post the recipe just yet because it’s sort of bland and I really want to perfect it first.
